Daegu Makchang Enjoyed During a Business Trip (Dongchon Riverside Park, Maru Makchang)

Today's business trip destination was Daegu.

When you think of Daegu, what comes to mind?

It's definitely Daegu makchang!

Today, the boss recommended a place called "Maru Makchang" located near Dongchon Riverside Park in Daegu.

Maru Makchang is a place where you can enjoy fresh pork makchang!

We ordered the fresh pork makchang, and wow, it looked absolutely fantastic!

생막창

Being from Seoul, when I first saw the fresh makchang,

 I wondered how to grill it properly. 

But the boss at the business site offered to grill it for us, 

teasing that someone from Seoul wouldn’t know how to do it properly. 

돼지막창

The fresh makchang was thick and looked incredibly appetizing!

While one side was grilling, the boss made some ssamjang (dipping sauce) for us.

 

He added lots of chili peppers and green onions to the ssamjang.

As the makchang was getting grilled to a golden brown on both sides, 

I was wondering how to cook the inside.

And just like that, the Daegu boss showed us the trick!

He taught us to cut the makchang in half to cook the inside properly. 

If I were alone, I would have kept rolling it around, trying to cook the inside evenly.

After grilling the makchang to a perfect golden brown, it was time to enjoy!

 

The makchang was so chewy and delicious.

To wrap up the meal, 

we ordered some doenjang guksu (soybean paste noodles).

The doenjang guksu broth was incredibly flavorful and refreshing, 

perfectly cleansing the palate after the rich makchang.
